01 The bar
Choose by mood, not by expertise.
The menu will make room for a clean classic, a house drink with a more particular point of view, something lower in alcohol, or no alcohol at all. The same bar serves the upstairs dining room and the downstairs After Dark room.

Made for the whole menu arc.
Bright and dry with sashimi. Aromatic with Thai herbs and chile. Structured enough for smoke and aged cuts. The final list will be edited around the food, not assembled beside it.
